Default Crawfish Boil Filler Omelette

I'll usually use the leftover fillers from our crawfish boils (boiled carrots, mushrooms, and onions) to make a big hash with, but I didn't have time this morning, so I used them to make an omelette. I also made breakfast potatoes with the boiled potatoes. I'll be doing this again for sure.
