Default How to turn THIS into THIS

Made me a tree rat hunt yesterday (10.6.13). Ended up with 5. Came back and cleaned them. Could still hear some barking behing the house and grabbed shotgun and nailed 3 more, cleaned them too and set them to boil. 2 hours later they were falling off the bone. Buddy came out of woods from bow hunting and said they were everywhere. around his stand. He grabbed his Benelli and went and massacred his limit in about 35 minutes. Decided to make a chili in the crock pot. Had chili smelling good and went to climb in the stand around 3:00pm. No deer. Drew on a coyote but the dang gun rest on the stand got in my way. All in all a good day.

My recipe for squirrel chili::::

Boil squirrels at a med-high boil in a cast iron pot for 2-3 hours. Season squirrel heavily with tony's and lemon pepper while boiling. Keep adding water and draining 2 times during the boil to get rid of excess hair and shot. Use a set of tongs to grab a leg, if it falls apart, its ready to take out.. put squirrels in strainer and put strainer into a bowl of ice water. Pick meat off bone.

Get crock pot out and add the following:
1 can (average) petite diced tomato's
1 small can of paste
1 small can of tomato sauce
1 can of water from empty tomato sauce can
2 tsb's garlic (dried or minced)
1 pack of chili seasoning
1 onion (diced)
1/2 bellpepper diced.
Cook this mixture above on high for 1 hr stirring periodically.
After hour is up. Add squirrel meat and set on low for 3-4 hrs. It takes a while, but comes out AMAZING.

To cut this time in half, when you drain squirrels 1st time, go ahead and put all ingredients in crockpot

I killed those squirrels and had them cleaned by 9:00am. Had them in the crockpot by 10:45 and was eating them at 5:30

WARNING----Be careful around rib cage area and make sure and pick the BB's out from the shot. Will chip a tooth. If the directions arent clear, let me know and I'll be happy to answer any and all questions.

I do this chili with rabbit, dove, duck, deer, hamburger meat, etc.....

i see more fox than grey's because I live in the piney woods. Its about 50/50 this year. Seen alot of cat (grey) squirrels this year. I like killin' 'em because they are more tender than a fox...... Taste is the same, but cleaning them (cats) are alot easier.

Speaking of which............. Im going to start another thread on how to clean squirrels.....
