Default Cheesy redfish-a-la-half shell

Been sick the past 72 hrs with what the doc called a 48hr virus. My fever finally broke and I was feeling better this afternoon, so decided to get to cooking.

Covered the pan with foil and balsamic vinegar then Started with a nice slab of redfish on the half shell.

Seasoned it up with a lil La hot sauce, Cajun power garlic sauce, couple dashes of slap ya momma, and a good bit of lemon pepper. Then I sliced some butter to keep it all moist.

Cover all that with some shredded cheese and toss it in the oven at 450 for 25 minutes.

While I had that going I cut up some veggies for the salad.

Got ot love that balsamic vinegar. Mix it 1:1 with some bourbon to make it pop. Put that on anything!

I have quite a bit of redfish to cook right now. I want to try to do something with some bourbon and pepper jelly like at shucks. My dad is tight with the owner I'm gonna see if I can get his recipe.

My buddy chad told me about this

Take blacken season and rub real good
Take LUDs and baste it good
Lemon pepper
Butter and garlic mix
Cover with mayo
Put shredded parmesen cheese

Hit the pit till cheese is melted

I like it with butter, garlic and lemons. I sprinkle Swamp Fire crawfish seasoning about halfway through cooking.
