Take a couple slices of that head cheese lay ém on a slice of evangeline put a slice or onion on top thin squirt on some mustard. Top it with another slice of bread and ya got a samage that would make that beer proud to be seen with it.

When I was a kid, I would stay the night with my grandfather a lot during the summertime after my grandmother went to heaven.
Every Wednesday night we would have hog head cheese sandwiches for supper while watching Gunsmoke, Rifleman and Bonanza. My job was to toast the bread while my grandfather would fry the hog head cheese in the skillet enough to get a crust on it. Then he would sautéed some onions while I lathered up the toasted bread with mustard. I don't think I have eaten one since he went to heaven which was in 1987..... I'm going to change that once the good meat markets open back up after the Labor Day weekend. |

Hog head cheese ....Mmmmm I went to Lake Charles last week and picked up some green onion sausage and some Andouille sausage for gumbo. I forgot to pick up some hog head cheese. What stores in Lake Charles-Sulphur area have the best hog head cheese
