Hey I been making them for years. I won the Contraband Days BBQ cookoff with the venison ones 03 or 04. If any of yall havent had them this way you dont know what your missing. Also try them with pork loin or duck.

i have always cooked the backstrap this was the first time i did the tenderloin like this and it turned out better than the backstrap IMO

i used to do it like that now i just cut a slit in the backstrap and stuff it then wrap it. to me it is a lot easier than cutting it into pieces and pounding them. the kids like it better when i cut them into pieces so i still do it like that sometimes but most of the time i don't

Nice, I'm saving my "Cajun Football" (backstrap stuffed with cream cheese and jalapenos) for opening day of football! Can't beat that on the grill!
