Pickled eggs

2 doz hard boiled eggs
3 Tbsp salt 1 12 oz jar jalapenos (sliced) 6 bay leaves 2 onions (sliced) 2 tsp pickling spice 1 qt water 1 qt white vinegar 1 ea gallon pickle jar Peel eggs and put in pickle jar.sprinkle salt over them. Drain the juice from the peppers and pour the juice over the eggs. add bay leaves ,onion and pickling spice. Boil water and vinegar and pour over eggs. close jar and let sit at least a week. The longer it sits the better. (If you want some color add the juice from one can of pickled beets) Once you taste the first one ,if it is not spicy enough ,you can add more jalapeno juice or some of the peppers to the jar and let it sit again. Write down what you do. that way when you get them to your liking you know what to add from the begining next time. |
