Keep everything very cold. Especially the butter. Some recipes even recommend to freeze the butter and grate it. Next important thing to flaky biscuits is to not mix the dough thoroughly. The dough needs separation for flakiness.

not enough baking powder for the amount of flour: use two teaspoons per two cups flour, try 425-450 for preheated oven. Put biscuits in cast iron skillet not preheated, also it matters what flour you use. I prefer buttermilk; if you use buttermilk add some baking soda. You should also play around with sour dough biscuits. Some folks really prefer them to regular biscuits. LIke ME!

OK---thanks everyone. i've got it right now. cold, more baking powder and a cast iron skillet. i see some added pounds in my future.
