Default Gator recipes

I have some gator meat in the freezer that needs to be cooked. I'm looking to do something other than frying or sauce piquant. Anybody has any good recipes or ideas they'd care to share?

Make sausage . You can mix in rice and red fish sort of like boudin . I made some and boiled in a lil zatarains 15 minutes then put on the bbq pit or smoker .

I don't have all the tools to make sausage. That does sound legit though.

If only Auto Correct spoke Cajun, right?! I already fried some and made a piquant. Looking to try something new.

I can do that. Any pointers? How long on the pit, temps, certain seasoning you prefer?

I have several different cuts. Tail roast, cheek, assorted meat chunks from cleaning it. What would do best on the pit?

I have grilled tail meat before and it was pretty good. Just put a little Tony's on it and basted with a little sauce after the first flip. It doesn't really take that long to cook. You can do frog legs the same way and they are pretty good

Thanks fellas! I've grilled frog legs quite a few times, so I'm fairly familiar with what you are taking about. I might try with a buffalo sauce instead of bbq sauce. I'm also thinking kabobs. Will the meat cook too quick for that?
