Churn Strawberry wine.......

Caught the guy selling strawberries today $14.00 a flat. last day he said so I bit and got some wine a brewing...

Well the strawberry went bad on me . I tested it after a couple weeks fermenting and it was good and good alcohol content and I should have strained and stopped fermentation but let it go on .
I use a half gallon crushed berries with juice , 4 cups sugar , packet wine yeast I get from wine makers toy store on line , Lal Vin 71B-1122 . Fill to where my jug narrows . Put 2 pinholes in balloon , when balloon falls fermenting over .
I usually make with 2 cans frozen concentrate grape juice , 1 packet yeast , 3 cups sugar , water to top off to neck . Any frozen concentrate works just depends on your taste in wine...I've used orange , pineapple , cranberry , apple .

I've never had problems with frozen concentrates but it's hit and miss with fresh . I think I let it go too long before racking . I don't have too much exp. with the fresh really , but I am determined.....

I been taking all my research and old recipes from others and everything I get from the brew shop and kind of put it all together. It's experimenting that makes you know what you like and dislike. I think with this batch I have figured out some new ideas. If this batch comes out good then I'm documenting it for future brewing.

So after 2 weeks in the sealed bucket out comes the blackberry wine.
Rack into carboy and add potassium metabisulfate and potassium sorbate.
Rack a little more than 3/4 of the wine into carboy and stop. Put the additives in and then stir for a minute and a half back and forth from forward to reverse at half speed. Let foam settle out for about 30-40 min then put the rest of the wine in and fill up to top with no air space........
See you in 2 weeks for second racking and clearing.
