got 4 racks of 3 and down spare ribs 4 lbs of sausage and qa pan full of the trimmings from the ribs on to smoke over a pecan and a lil mesquite fire. Eating good in the hood tonifght!!!!

We had to eat shrimp, REAL fried taters and hushpuppies.
We's Catholics...

But I gots some Quail and corn on the cob out for tomorrow.

Default Good Friday Reds

Pulled these redfish fillets out to grill on the half shell tonight. Caught these over the last two trips. Had plans to go today but got blown out!!!

Nope. Used Zatarains Shrimp Fry.
Not as good as flour or Tony's Fish Fry.

Here's the pan of meat that i trimmed from the ribs .will use this for baked beans or chilli.


smoked sausage for snacking

Same here Ray, we had some fried catfish, garfish, crab, sacalait, hushpuppies, sweet potato fries, regular fries, corn nuggest, jalepeno poppers, onion blossoms, squash and some other vegetables that I stayed away from. Everything was awesome for lunch then the wife and I went to her grandparents and tore up some shrimp stew her uncle cooked. Good Friday was full of good food and great times with the families...can't wait til Easter Sunday tomorrow!!!!!

Had a big azzed bacon sandwich for breakfast, Quail w/rice and gravy for lunch.

Fixing to put a brisket in the smoker tonight and some spare ribs
early in the morning. Will BBQ some chicken and smoked sauage tomorrow
also. Man its hard to beat smoked brisket.
