We have some Chinese or Japanese people who sometimes come to the gut buckets and cut off all the bellies

Haha... You sound like the Asian chick I work with. People say I eat some fairly weird things, but this chick eats some down right nasty stuff. She claims that when she took her husband to Vietnam to meet her parents, they cooked him dog!!

I gave 5 trout and a red to a Vietnamese welder at my shop. He dried them and said they were awesome. Don't think I will be trying any time soon.

Salmon throats n bellies make the best smoked fish because of the fat. They make the best halibut bait for the same reason.

Try broiled yellow tail cheeks. I had it once at a sushi bar. I tell ya it was the best cooked fish to date. The sushi chef said it wasn't on the menu and he saved it for his special customers.
