Brew Hog Headless Cheese

I like hog head cheese but most use the skin ground up after boiling and don't care for that . Well lets just say a case of pig feet cleaned and quartered dropped down from heaven and i got some sirloin chops at .97 which when parted out comes out to same as boston butt but with a whole lot less fat....Came out pretty good but I think I could have cooked down a couple more feet for more liquid....Ain't nothin like doing it for yourself.....

P.S. I basically used salt , pepper , onion , parsley , shallot , garlic , bay leaf ......
Anybody use anything else I would not be afraid to try.....
