Chopped a pound of drained tails in a processer . Put juice in gravy. Mix with enough panko bread crumbs to hold together and 2 eggs. Season to taste. Finely chop a lil onion , shallot ,bell pepper and mix together. Roll into balls and then in plain flour and fry a lil and add to gravy. I like to add another p?und of tails to gravy also. Simmer about half hour so gravy gets flavored.

sounds great I use tater stead of bread and zaterain corn flour for breading on acounta peg cant have wheat. hard to beat crawfish boulettes. They have a hearty flavor that works great this way.
