Default Trash duck

Ol spoonies ain't bad if you cook em right. I didn't feel like messing with sides tonight so it was meat and bread to sop up the juice.

I usually marinate it overnight but I forgot last night. I put it marinating when I got home and went work with the pup for about an hour. I make my marinade with milk, garlic, and rosemary. Right before I sear it I sprinkle some salt and black pepper. 45 seconds to a minute per side and c'est tout. Let it rest for a few minutes before slicing. While it rest I kill the heat on my skillet and add a spoon full of butter and a splash of milk to make a sauce with the juices and seasoning leftover in the skillet. Really simple and absolutely delicious.

I'll eat spooners any day. They aren't trash. In my opinion only trash birds are birds that eat fish or shellfish. That's what gives the bad taste. I have had bad mallards and bad pintail if they have been eating that junk. If birds are eating rice and good grasses I think I really doesn't matter what bird it is. Just my opinion and so far it has been proven well for me.

Good looking dinner though. My wife loves it when they are cooked like that.

I cooked some spoonie breasts for some anti spoon people before and they thought they were deliciuos. Then I told em they were bootlips lol
