shadman, do i get another month membership for taking a pic of the saltycajun.com decal with the ducks ?? I thought it made for a nice photo opp...

whats so bad from breasting and plucking them ? u get like 2oz more meat for double the work. I aint got a wax tub or plucker...

Well, we kill quite a few ducks every year. I ain't about to eat a big pile of ducks cooked the same way every single time. I will breast a few, like mallards and grays for some bacon wrap. But ain't no way I am breastin some delicious wood ducks. They gone in da black pot for some mighty fine pot roastin.

Jordan try this next time. Cut the meat off the breast. With a wood duck I would cut the breast in half...meaning the thickness of the breast. Then from there, cut it in half. In turn, one breast (side) will consist of 4 pieces of meat. Take a strip of bacon and cut it in half. Put the piece of breast on the 1/2 strip of bacon and add your H pepper and cream chesse and roll. Basically, you have smaller pieces. I never seen it done like the picture using the whole duck. Matter of fact, I am doing teal tonight.

well i would have done the same if i was going to cook them like that....we don't kill all the ducks yall do we too far north don't have any marsh or flooded timber just pine trees everywhere. all we get is woodies...nothing better than ducks and bacon...jordan you need to put some cream cheese in there
