Default Erosion Control

What is the best thing to plant on a hillside to help prevent erosion.

Really, the sky is the limit on what will work. Grasses are the best because of their coverage, but you could do a combination of grasses and forbs for diversity, if desired. For availability purposes, however, I would recommend bahia or bermuda grass. The growth form of both will get you a lot of coverage quickly, and the root system will really hold that soil in place. Bunch grasses, like bluestem, do not spread as much and would likely require more seed to accomplish the same coverage, or a combination of bunch grasses and forbs, such as sunflowers.
