Duck Shrimp and tasso paella
Inspired from the latest duck cooking on here, I defrosted some ducks and decided on a paella. It is kinda like a Mexican jambalaya. paella.jpg I gathered the ingredients and started to fry my wild rice to break the hulls. I wanted to add more earthy flavors so in goes the Envie! paella2.jpg As it cooks, I pan sear my duck breast after a quick marinade of Dale's Seasoning and fresh cracked pepper. paella cooking.jpg After the wild rice is almost cooked, time to add the Spanish rice and seasonings. Saffron is the kicker here guys! Got the pan at world market. Takes some getting use to, I'm a black iron pot type of guy.
It was very good. I even brought some over to Parish Brewery (neighbors) so they could taste. They enjoyed too! |
