was in the freezer last night looking for a bag of snapper fillets to take out for dinner today..when i realized i gotta have atleast 20 bags amberjack i still havent used..took a few bags out and went to work...i shoulda took pics..but me and dad marinated e over night had them right..woke up early this morning and threw the on the smoker...mmmm talk about one hell of a flavorfull meal...decided to get tuff t make tacos with it...turned out awsome...got so much left over ima make salad tomorow..try to smoke yalls fish more often..its awsome...especially AJ and Snapper..

love smoked fish! never had AJ..but i smoke alot of Kingfish and spanish...

Just made the jalapeno-cilantro ranch dressing and put it in the refrigerator to "get right".

yaa dude..we made this chipoltle mayonaise kinda spread to go wit it...it worked out really good wit the smoked flavor...

Mayonaise
Ground up chipoltle peppers
Chipoltle sauce
lil bit of rotel
plain vanilla yougurt

Oh man my stomach hurts so freakin bad. That was the best damn fish I've ever cooked....no ****! Italian bread crumbs cut with flour and some Tony's. Melted that butter with some crushed garlic then pan fried it. Put it on top of some white corn tortillas and that jalapeno cilantro with some pico......I need a nap!
