Had the day off and no plans to do anything but yard work at home so I decided it's time for a brisket. Have been wanting to do one but haven't had a full day to dedicate to it. Put this on at 5:30 and this is about 8 hours into it. Color is looking good. Took this pic about 1:30. Wrapped in foil about 2:30 and just letting it finish until 5 or so. Will be 11/12 hours on the pit. Oak and hickory doing the magic.

Sho looks good man I took a pack of chicken thighs ot da freezer to thaw over night then gonna marinate them for a day and maybe fore up da pit long about Wednesday or if it rains drag out a black iron pot or something. Hard to beat a good low slow brisket!!

Nice!! Nothing like a crispy bark and a little sliver of fat that melts in your mouth like butter!!!
