The first pot is used to boil and the second pot is used for the cool down or soak process... same concept as adding "good ice" to one pot.

Plus you dont have to reheat the first pot like you would if you added ice. Second pot option is optimal for boiling a ch it load of crawfish. I have done it both ways and both come out nice.
