so Cajun food is now American food? What defines American style? Do restaurant owners and workers in non "American" style venues not pay taxes?

As for your comparison, I did no such thing. I brought up a point you can't deny and you had to find something to build upon. They stopped teaching their way of life and now it is practically lost because no one other than those people embraced it.
I've read on this forum people crying over the fact that Cajun French culture and heritage (language being a huge one) has fallen by the wayside. that's where your argument gets you.
