Smoked a fatty Saturday.......

green onion sausage stuffed with cheese and wrapped in a bacon weave

Oh yea.... I love to smoke those fatties also. I have never tried the green onion sausage.

I did one the other day for the kids that was blueberry pancakes in the middle with Owens maple sausage...they scarfed it down.

All I did was take some green onion sausage from the store, took it out the casin and flattened it out between 2 pieces of wax paper and sprinkled it with some seasoning. Put some cheese on top of that and wrapped it up. Then i wrpped that with the bacon weave.

oh and to get your weave going make a cross with the bacon and start from the inside out. It's easier that way.

Not too sure about the oven but I always do them on my smoker and then throw them on the gas grill at the end to crisp up the bacon, so you can definetly cook on on the pit.....just not so sure about the oven.

You could do it in the oven but you obviously wouldn't get the nice smoke ring. I'd go 375 for an hour or so or till the inside hits 165 then I would put it under the broiler to crisp the bacon.


Also, I used lump charcoal to do mine, I did it on a simple weber kettle grill. When it hit 165 internal temp I added a some more lump charcoal to get it really hit and brown the outside, I guess I could have just put I under the broiler though, by that time it had the smoke flavor.

The blue berry pancake one is my favorite. Add some scrambled eggs next time.

I tried one myself for the first time this weekend. Pork sausage, BBQ sauce, provalone cheeze. Gonna put more cheeze next time. Kept pit at 250 degrees til internal temp hit 165.
