BananaTom Chicken Casserole
4-5 Chicken Breasts boiled and diced or pulled
1 Can of Cream of Chicken
1 8oz Sour cream
1 package of mushrooms – optional
1 sleeve of Ritz Crackers
Butter
Lemon Pepper
Flour
Mix the cooked chicken, cream of chicken, sour cream, and mushroom cooked in 1 stick of butter, and add lemon pepper taste. Place in Pyrex.
I use flour when I use too much butter ( on purpose cooking the mushrooms) to soak up the liquid to make it thicker.
Crush the sleeve of Ritz Crackers. I use a gallon zip lock and a rolling pin or can of soup to turn into a fine powder. Melt 1 stick of butter and mix the crushed Ritz crackers into the butter for a topping. Spread it on top of the product in the Pyrex.
Bake for 30 minutes at 350 degrees.
This is my favorite to do. I triple it for a group of 25.
