Season ribs real good with salt, black pepper, and red pepper. Start your charcoal up. Once charcoal is ready add some chunks of pecan wood and get a good smoke rolling. Do you wet the wood to make it smoke?
I have a whole jar of Luds at the house at all times.....beer too.
