One of my favorite fish recipe's other than frying and grilling is this:
Take about 10 med. fillets and lightly coat with flour, not battered, no milk or butter.
Fry them in a big black pot with seasoned butter, but don't cook all the way. Just enough to lightly brown the flour.
Remove the fish and set aside.
Take some cut up onions and put into the big black pot and cook down in the butter and grot till real soft. Then add a few tablespoons of mustard and continue cooking until it look like a nice light brown color.
Spray a glass dish with pam or butter and put a layer of fish, cover with the mustard and onion, the season with Tony's. Then add another layer of fish and another layer of onions.
Put in the oven, uncovered for about 20 minutes or until it is nice and brown on top.
Slap yo mamma good.
The whiter the meat, the better the taste.
I did this with Snapper, Dolphin and Amberjack when I fished offshore.
