I took my children deer hunting with me from the very youngest ages and had them squeeze the trigger while I held the gun to my shoulder. We killed a number of deer this way, with my children (as young as 3) squeezing the trigger on successful deer kills. They were killing deer, shouldering the guns themselves, by age 9 or so, as well as effectively using a crossbow for successful kills.
Safety and comfort are the key to both hunting and fishing with children. Early success is also important.
My daughter (15) is now an excellent rifle shot, regularly competing well (and occasionally winning) long range rifle contests and bench rest. She's also acquired an NRA Junior Instructor certification in Basic Pistol.
