Just skin the red/pink fat ones and they are good, or breast them and take the legs. Spoonies have big gizzards too. my motto is: If it flies like a duck, it dies like a duck. Coots don't normally seem to fly like a duck to me. Merganzers don't look very ducky to me either. I met a dude in the refuge who had several merganzers in his bag so I asked him how they tasted. He said he soaks the breasts in orange juice in the refrigerator for a couple of days. Then he fries them and he said they were pretty good. Hooded merganzer drakes and black bellied tree ducks are kinda ugly, pretty. Tree ducks are very good to eat.
