for bottom fishing use a Carolina type rig. This is what I used when I worked on the charter boats. 60 to 80lb leader line depending on your targeted fish and what type of rod and reel you are using. For bait we used cigar minnows for pretty much anything on the bottom or drifting. Hard tails and large menhaden are the best for AJs, but pretty much anything live will work once you find the AJs.
There is a lot more but that might get you going.
