Smoke Meatloaf
5 lb. ground beef 2 lb. sausage 4 eggs 1 meatloaf seasoning package 1/4 cup parmesean cheese 1 onion chopped 1/4 cup catsup 1/4 cup mustard 1/4 cup BBQ sauce 1- 8 oz. jar chunky salsa 2 tbsp soy sauce 2 tbsp malt vinegar 1 tbsp garlic powder 1 tbsp salt 1 tbsp pepper 1-2 cups bread crumbs to thicken Topping: 1 tsp worchestershire 2 tbsp mustard 2 tbsp catsup 2 tbsp bbq sauce 2 tbsp Jack Daniels glaze Directions: Add all items except bread crumbs, ground beef and sausage and mix thouroughly. Break sausage and hamburger into pieces to insure thorough mixing. Once mixed, add enough bread crumbs to bring it together. Packed it into a container lined with plastic wrap (this helps get it out of the container when ready to cook) and chilled for 3-4 hours to set. Turn out onto a foil covered wire rack and place on top of foil lined cake pan to allow grease to run off. Smoke at 250 degrees for appx. 4.5-5 hours until internal temp is 165. Baste with the topping mixture after 3 hours... Enjoy |
