Default Red Beans and Rice

Anyone have a good red beans and rice recipe? im up here in New York with no cook book craving some good food! any help would be greatly appreciated

yep what he said..
basically you want to soak your beans for at least 8 hrs then rinse em
brown your sausage
saute some onions,bell pepper,celery, and garlic
put like 6 cups of water to boil with beans
throw in veggies and sausage and maybe ham hock
I season it with tonys, tabasco,and worcestershire
cook for a couple of hours making sure it doesnt stick

I cook for pounds every Monday at work with no complaints......
Sausage and Andouille.
Two cans rotel
Two cans beef consomme
load of the holy trinity
drop it all in the pot
slow role cook it for six hours
Done

Cook the sausage with the beans. I see too many places that offer them seperate and you have to put the sausage in the beans yourself after they are cooked.
I love Hocks in my beans too. And/or Tasso.
