IMHO you have way to much fat for jerky. Make sure if you don't have cure in your marinade to store in the fridge.

I totally agree. I just didnt wanna spend $4 a pound since its gonna shrink down. I got some beef chuck roast for $1.99lb and figured id make some beef jerky out of one. After a few hours on low heat that fat really holds in some flavor

Next time get eye of round. Even cheaper and less fat to trim.

Eye of round or sirloin tip should be good and not hard to find . Come on over to Smokingmeatforums.com and read up on making jerky. many different ways and recipes.
