Default Gumbo

Me and a co-worker volunteered to cook a gumbo for a company luncheon.

We have to make it big enough for to feed 80 people. How big do you think it needs to be?

I usually do a 50 qt pot for abt 40

Depends on the groups make up. I have use this, a good bowl is about 2 cups gumbo and 1 cup rice, so:

# women X 1.5 X 2 cups gumbo

# men X 1.5 X 4 cups gumbo

I always had a little left over, but not a lot. Better too much than to run out imo.

So if your crowd is half women and half women you would need 23 gallons or 92 quarts.

We planned on doing an 80 quart pot..... may have to bump that up. Someone else is making Potato Salad and the women (probably 25-30) are bringing the sweets.

With sides and being a luncheon you may be good with the 80 qt pot. I mostly cooked for evening functions where there was more time to consume the food. And beer makes some people eat more.

Thanks for the replies.

If the pot is full which it will be pretty close to it..... that's a quart per person. I don't think they going to eat all that.

I'll post some pics when cook it.

I was kind of busy. Komi g and this is on the only pic I took.

We put 7 rotisserie chickens
5 pounds chicken breast
5 pounds chicken thighs
8 rounds smoked sausage
8 pounds andouille
3 pounds hills hire farms smoked sausage
9 pounds onions
Bundle celery
12 bell peppers
1 1/2 cups minced garlic
3/4 baby food jar of file'
2 cups fresh green onion tips out the garden
2 cups fresh parsley out the garden
6 cups flour
4 cups oil for the roux

You didn't have to dredge for meat in this Gumbo!
