Yep, that's how I roll. If you back up the blade a little after you make the cut along the backbone from head to tail you can flip the fillet back over without touching it. The guides can do it without ever stopping the blade they just change the directions quickly. It doesn't work on redfish of course. How about a good flounder cleaning video. I've seen some dudes butcher a nice flounder and then trow away the white side. HaHa.

Thats how i do it, but for the vid i just used my hand to be percise lol.....its hard to do it slow...

saw some guides do it that way a few years ago. once you get a rhythm you can roll through some fish.
