Default Tuna

A friend gave me some freshly caught Yellow Fin Tuna. Does anyone have any good recipes for cutting steaks and pan searing or grilling? I have had tuna steaks before with just seasoning and butter on them and is was good that way.

First off dont rinse it off and if you are cutting steaks just make long cuts in one direction with a sharp knife, like a filet knife, dont saw it. You dont need much, just some cracked pepper and sea salt and sesame seeds. Sear it on both sides in a very hot skillet in Olive oil and some sesame oil. Get you some ponzu sauce to dip it in and youre good to go.

Thanks on the tip about cutting it. It is in strips. I plan to cut it about 3/4-inch thick.

toast some sesame seeds on top of the stove. Then add them to both sides of your steaks before grilling. Its easy to do an adds a great texture to the meat.

That recipe goes best with scallops, or those monster stingrays you and Brad catch offshore.

Montreal Chicken seasoning is very good on tuna steaks. You can season them pretty liberally, it is not a strong or salty seasoning.
