I have not made a Sauce Piquante in a long time. But when I do make it, I make a big pot and freeze it before putting any kind of meat in it.

That way, I can take out some from the freezer and put what every I want in it.

That is nice bro. I don't get turtle very often so it's a special treat. I'm saving it for our first nice cool front so I can spend the day out back slow simmering over an open fire while I enjoy a cold beer and the fire

In my chubby opinion a good turtle sauce piquante is the best thing to eat on da planet.

Here is a good sauce I make in the crock pot on a cold rainy day. Complete with pictures and recipe.
