Who let the divers out?!?

Most of our ducks have been divers this year, scaup and redheads. If it flies like a duck, it dies like a duck. Breast them, take the legs, hearts and gizzards. Good in a gumbo. I draw the line on mergansers, a guy in the refuge told me he breasts them and soaks them in orange juice for a couple of days. They don't seem to me to even fly like a duck, I just let them keep on flying.

We have been covered in them to since the rain started last week. However, we are lucky enough to have good ducks; teal, greys and mallards so really do not have to shoot them on most hunts.

Canvasbacks and redheads are better than pintail and grays, in my opinion. There was an article in a DU magazine several years ago that was titled "King Duck." It talked about how canvasbacks were prime time table fare back in the day. That's why so many were killed. To me, they are at the top of my list to eat, behind a wood duck.

The cops are the experts on the current criminal trends. Take a look at this website, its really good for recipes and the guy is a really good writer also. He is a chef and goes into detail about the fat of ducks and what is good and what is bad, even goes into chemistry of it all. Really good site to check out As for mergansers, they are not technically a duck. They get a pass from me |

I have never seen so many scaup and ringnecks in my life. My friends in pecan island have never either. don't know why they all showed up this year!?
