How does the paint hold up over time? Like say wade fishing all winter.

I've tried everything...lacquer, acrylic enamel, water borne. I doubt seriously it'll stand the abuse of an epoxy factory finish. The ones I've done so far are, like Chris said, just sitting in display cases. That's not to say they won't hold up. Saltwater will not harm the finish.
