Eatin aint cheatin....... croaker are closely related to redfish, they are excellent table fare, especially the 12-14" ones.

I gut and dehead them and bake them whole covered with onions and bellpeppers. Some good eatin right there!

Small ones eat whole and big ones cut up. They are good fried, grilled, or baked. Sitting next to that beer makes me think a beer batter would do the trick... Now im hungry.
