Finished product... Went with angel hair pasta vs. rice for a change... Fresh thighs, mushrooms, roasted shaved garlic, trinity, crushed tomatoes, olive oil, time and heat... Good stuff !!!

![]() Coat inside of roaster with olive oil. Place ten skin on, bone in thighs in your roaster around the edge as these cookers heat from the sides. Season thighs with Tony's and crushed black pepper. Add raw trinity to the middle of the roaster (450 degrees) between the ring of thighs, add fresh mushrooms and stock as well. Let this go for around a hour or so and turn your thighs 180 degrees around so the other side of the thighs cook too. Add two cans of Rotel and two small cans of tomato paste on top of the now cooked down trinity. Slice or shave 10 garlic cloves and add to the mix as well, crack more pepper on the thighs. Cook for another hour... Open your roaster and move the chicken to the middle and spoon your now thick sauce to the sides for another 30 mins till it gets nice and bubbly... Serve over rice or pasta ! That's it... Hydro |
