I have always been amazed at how little meat you get off a sheepshead. And conversely how "much" meat you get off flounder & trout.

I would guess that on average you get 60+% of weight back from flounder, low to mid 50% on trout.

I bet you dont get but maybe 30-35% back from sheepshead.

Maybe I've just gotten good at it, but I can clean a dozen gafftops in 20 minutes. Yields are pretty good with 4-7 pound fish, less so with the 2-3 pounders.

Never tried the Gafftops, but i am sure they eat just fine.
