![]() Happy Thanksgiving to everyone! I hope everyone has a great day and full bellies before it's over. No grilling here today, I'm doing our turkey the classic way I did for many years. Slow roasted overnight. Smelling fantastic and looks like a good one too.

Same to you. We had the good ol slow roasted turkey, never dry. Had a pork roast, tators and gravy, and all kinds of fixins. But the best part is Pecan pie, sweet potato pie, sweet potato cheesecake with maple syrup/heavy cream and pecans drizzled over it, and the main highlight is my favorite... Carrot cake. All the guys in the family are hooked on carrot cake with cream cheese icing, the women don't care for it but always make it, weird.
Happy thanksgiving! Back to the gym on Saturday, I'm saving tomorrow for polishing off those pies with my coffee... |

![]() Well, another great Thanksgiving is in the books here. The eats were fantastic if I may say so. Started doing a little bit of cooking and prep work each night this week and Thanksgiving morning went perfectly smooth with no problems except for my bread which I hated and everybody else thought was good. Oh, the other thing was I forgot to get all the pictures I wanted to get. Oh well!
The turkey was a Butterball that weighed in at just under twenty three pounds. I put it in a brine on Tuesday night and took it out and rinsed it well Wednesday afternoon. Glad to have that big stainless steel sink when it comes to things like this. ![]() After rinsing I put it to air dry in the fridge to make seasoning stick better. When it was time to go into the oven I took it out Injected it with a Cajun injection marinade and then rubbed it down allover with butter and seasoned with my Cajun seasoning and more black pepper. ![]() Using the slow roasting method I heat the oven to 500* and stick the bird in there until all of the outside of it looks good and browned and then lower the oven temperature to 200* and called it a night for me. I get up a couple times during the night to check on it and it's always fine. By 9:30 am Thanksgiving morning it done! I just turn the oven off and it stays warm. ![]() Of course the whole house smells fantastic the whole night while the turkey is slow roasting and when I check on the turkey it brings one of the dogs to the kitchen to investigate that wonderful smell. ![]() In the blink of an eye the other dog appears and I begin to think if I don't close the oven soon that a scene from A Christmas Story will ensue. ![]() I know they're thinking "maybe all of this Turkey is for us". Yeah right! ![]() The bread pudding. ![]() A lil White Chocolate Rum sauce I whipped up for the bread pudding. ![]() Candied yams ![]() The whole meal was fantastic and of course everyone was stuffed and suffered from the Turkey Drug Effect. Uncontrollable napping! Our menu: Slow roasted turkey Turkey neck gravy Cornbread dressing Shrimp & Mirliton dressing Candied yams Green peas Grenbean casserole Mac & cheese Another sweet potato dish Sweet potato crunch(closer to a dessert dish) Dirty rice Homemade bread Homemade cranberry sauce Wine: Prosecco Dessrt: Ooey gooey pumkin bars Pumpkin pie Bread Pudding |
