Default Pancakes and Pepperjack Omelet

Last night's dinner was actually breakfast. A pretty good one too!
We didn't feel like anything too complicated but wanted something good. I chopped some fresh green onions from the yard and added that to a Mason jar along with some fresh yard eggs and shook it up untill thoroughly mixed to make a big omelet filled with oozey melted pepperjack cheese.



The othe part of the meal was pancakes that went perfectly with the spicy cheese. A little sweet and heat is always a great combination.

Breakfast for dinner is where it's at! All you needed was a little bit of bacon. Bacon can end wars and mend broken hearts!

Always love breakfast for supper.

And omelette's are my favorite because the sky is the limit as to what a person can put in one.

I make sandwich out of everything so instead of folding the omelet I would go pancake/omelet/pancake then cut in fours to eat like pizza

I got a few onions growing out by the ditch. I pulled a few last week and put them in a stew.
