Default Blackened Wahoo Poboy

Im gonna tell you right now, I don't use recipes, I don't measure, I just cook. About 6 months ago I had the opportunity to fish with Military Appreciation Day in North Carolina and bagged quite a few Wahoo. Since then, most have been sitting the freezer at my wife's grandparents house after giving away a sizeable amount. Today, I had the chance to cook some and let me tell you, it was delicious.

1 loaf of fresh french bread

Wahoo (cubed)

1 lime (for juice)
dried oregano
Zatarain's Blackened Seasoning
tomatoes (diced)
lettuce
Garlic spread
1 Garlic clove (finely chopped)
mayo
onion powder
salt
black pepper

Cut french bread into poboy buns, apply garlic spread, then toast.

Cut wahoo into cubes, rub with Zatarain's, oregano, and garlic clove. Add a little oil to the pan and cook wahoo until done.

Then, add your fixins to the poboy, salt, pepper, eat.

Probably my favorite thing I have had with wahoo.

I made some blackened wahoo tacos last year and they were delicious. One of my favorite fish to eat.

Wahoo is amazing.
When we fish in Venice we always eat the fresh fish that night.

Of course the tuna both seared and raw is delicious but I prefer blackened Wahoo.
Wahoo and Lemon fish my two favorite. Both very firm and white meat.
