Default Ceviche to fish tacos!

Well, mothers day consisted of a wonderful fish fry and i'll be darn if i didn't have too many filets!

I took some of the extras and made Ceviche ( which i love to eat and love tinkering for the perfect formula). After a long day at work on Monday, i decided to throw it on a tortilla and have a cold fish taco.

All i can say guys, you need to try it!

I added a chipolte mustard and shredded cheese and a little sour cream.

Yummy!

What type of fish are you using to make your ceviche? I'd be interested to try that out.

I used some redfish. Cut all the "red" out. Strange part was my limes were dry so i cut them up and threw it in while marinating. Came out good!
