			 1) Seasoned with salt and pepper and pan seared with a rosemary butter sauce and a tomato and cucumber salad with a lemon and rice wine vinaigrette. spanish mack_rosemary butter.jpg 2) I liked the lemon and rice wine vinaigrette on the salad so much that I decided to try it on the fish. I did an hour marinade in straight lemon juice and a half of a fresh cayenne pepper diced from the garden. Seasoned with salt, pepper, cumin, and chili powder. Pan seared and used the lemon rice wine vinaigrette to make a butter sauce. Served it with a corn salad on the side. spanish mack_lemon butter.jpg |

Both look great but spanish are very oily and "fishy" tasting. Many people want to eat fish but don't want the "fishy taste". Lol.......

I won't lie, I had some chicken breast on deck just in case I didn't care for it. At first I figured the rosemary would overpower the fishy taste, but it was still there. Although not as bad as I had expected. The tang of the citrus and vinegar cut right through it. I would definitely eat it again.
