I use 1 part corn flour and 1 part AP flour.......for my egg wash.....one small bottle Louisiana hot sauce, 2 eggs about a half cup of italian dressing and a half cup of milk.

Dredge in the egg wash then in the flour and fry it up.....shrimps 2 minutes and fish 3

Default Like the corn flour since it gives

a little grit to the batter. Usually try to find the non-seasoned Zatarain's or similar and add seasoning. All of the seasoned products that I've seen have monosodium glutamate in it which I don't care for.

I was just about to post CAMP DOG, its great it has some kind of chili powder in with the corn meal, there hush puppy mix is good too. my mom just bought a case of it.

Everyone has their own twist to it, I like to put some Lamb's stone ground corn meal in with the Zatarains Southern Crispy with lemon flavor (the Zatarains does have MSG). Going to try the oven frying.
