Electricic Knife and work from the tail back to the head....hard part is the rib cage....

I leave the rib cage in them... I lay the fish flat and cut from head to tail down the middle right above the rib cage then just filet the top half of the fish.
I know there is alittle bit of waist but you end up with a nice pretty filet off those sheephead.... |

I just cut around the ribs, no meat there anyway.
