Default Bull Redfish Taco's

Wanted to share a recipe i used for the Big Redfish my boy caught at the beach. Pics are here http://archer7282.wordpress.com/2014...first-redfish/
I was a little concerned about cooking this fish up, I knew i would enjoy whatever i made out of it... But i wanted to make sure that my boy enjoyed it as well (to get him more into fishing)

I settled on this recipe as many people commented that when doing it this way the fish took the texture of chicken (which he loves) and had no fishy taste at all.



Redfish Taco's

Marinade 1 - 2 lbs of 1" chunked redfish (make sure you completely removed blood line and any red meat) in a mixture of the following.

2 tablespoons mayo
2 teaspoons sirachia sauce
1 teaspoon garlic powder
1 teaspoon onion powder
sprinkle of red pepper flakes (i skipped this so it wouldn't be to hot for the kid)
1 tablespoon apple cider vinegar

Let fish marinade for at least 1-2 hours with overnight being preferred.

Saute some thinly chopped yellow / red / green bell pepper, and yellow onion slices. When tender add in fish on med high heat, cook until done (usually 5 min or so with pan covered)

If you want it taco style place on flour / corn tortilla and accompany with lettuce, guacamole, some sour cream and your favorite hot sauce.

I chose to go taco less style... but it was still mighty tasty!
