Well, yesterday seemed like a good day for meatloaf so why not? I decided to make one bigger than usual because my daughter and son-in-law are doing renovations to their new house and cooking isn't really an option right now.

I like to cook it on a form of aluminum foil so I can punch holes in it to allow the rendered fat/juices to drain. I use another sheet of foil as a diffuser/juice catcher on a second grate. I also create an indentation in the top of the meatloaf to hold the sauce I add to if about two thirds through the cook.

While the meatloaf was cooking I cooked a couple of pounds of green beans my way.
Made some mashed potatoes and sliced the meatloaf when it was done and rested.
Annnnd...... it was time to eat.
Yeah, I served the green beans over rice. The juices from these are delicious over rice and I made a buttery chive rice for this.
Just a little PSA..... When grilling you MUST stay properly hydrated!
