axis and black buck are great eating, sika pretty good, fallow has a tallow taste even after aging. Aoudad, you cook in the oven at 550 degrees on a cypress board for 5 hrs, take it out, throw away the meat and eat the board. aoudad sausage, 98% pork and 2% aoudad meat.
